Colour, tradition and simplicity of Filippo La Mantia’s cuisine

The Filippo La Mantia’s culinary philosophy, of which inspiration remains tied with his birthplace Sicily, is the one that uses few simple ingredients, reinventing the recipes but keeping the traditional flavours and tastes.
The chef talks about food like a means to travel without moving, tasting recipes which express an interior original strength making that experience unique, a sort of meditation: “ My purpose in the kitchen is the return to simplicity, from the choice of the ingredients to the production”.
